Roasted Radishes

Ingredients

2 bunches radishes, trimmed (about 12 of them)
2 Tablespoons extra virgin olive oil (EVOO)
1 teaspoon ground thyme
1/2 lemon
Salt and pepper to taste

Steps of Preparation

Preheat oven to 450 degrees. Cut radishes into halves. Place the radishes on a baking sheet and toss with the EVOO, thyme, salt and pepper. Roast until tender, yet firm in the center, about 20 minutes. Remove from oven. Squeeze with fresh lemon juice and serve.
